I have been baking for most of my life now, and it’s something that has given me joy. I love to bake, even when it’s just boxed cakes or homemade cookies. I usually make baked goods for other people, just seeing smiles on people’s faces when they’re having a bad day, a baked good always cheers someone up.

I have done many baking projects in the past, including my homemade chocolate chip pumpkin cookies, regular chocolate chip, horse-shaped maritozzi, oatmeal raisin, and my favorite, a strawberry cheese danish; heck, I even made my own birthday cake for my 16th.
Although the sad thing is that I can never eat my own baked goods, I just can’t stomach them. Many people have told me my baked goods are amazing, but I have never had the joy of actually eating them. My friend Milly told me that I was her favorite baker, but it’s hard to believe that when I can’t even eat my own goods.

With baking, there are also a lot of challenges for me that have affected my skills over the years. For baking, you kind of have to be on your feet, going back and forth from the fridge to the table and then going to the cabinets to grab more bowls. It’s a pain for me since I have a leg disability that is currently getting worse over the years.
But, no matter how bad my legs get i don’t think I could ever stop baking, even if that means pushing through the pain a little bit. Baking will always be a hobby that calms me down.
Recently, the baked good I made was horse bread, which sounds exactly like how it looks. I spent three days on these maritozzi stay up till 3 AM each day, trying to finish them. One night burnt my hand so badly that I had to stop working altogether, and it’s still recovering.

The maritozzi turned out alright, some of the burned and the other buns were actually perfect. I made a cream cheese filling and a white chocolate finish on them. The tricky part was getting the eyes on; I had also made some chocolate butter cookies that I used for the mane. I used almonds for the ears as well. I think it really brought the horse’s look and made it look super cute! I was really excited about how they turned out!
Another treat I had the joy of making was my homemade Pumpkin Chocolate-Chip Cookies! I make these cookies for every special occasion, like holidays and family events. They’re a fan favorite at Norwin when I do make them! They are perfectly fluffy like a cake, but don’t fall apart like one. These cookies are a fam favorite and a hit when I bring them into school.
Baking has really shaped the person I am today; it has helped me in so many ways that I would say it basically saved my life. When I would feel horrible i would bake the bad feelings away and think of the smiles of others when I pass out my cookies.
